Corn is high in dietary fibre which comprises of both soluble and insoluble fiber. Soluble fiber helps in blocking cholesterol absorption by turning into a gel-like consistency whereas insoluble fiber prevents constipation.  Peas are low-fat and contain vitamin C and vitamin E, and a good amount of the antioxidant mineral zinc.

INGREDIENTS:
  • Corn kernel - 2 tbsp 
  • Green peas - 1 tbsp
  • Onion [sliced] - 1 tbsp 
  • Tomato [chopped] - 1 tbsp 
  • Coriander [chopped] - 1 tsp 
  • Mint chutney - 1 tsp 
  • Lemon juice - 1 tsp
  • Cumin seeds - 1 tsp
  • Salt - as per taste
  • Oil - ½ tsp
DIRECTIONS:
Step 1 Heat oil in a non-stick pan, and add cumin seed and onion. Saute till the onion becomes translucent.  Step 2 Add boiled corn kernels, boiled green peas, and salt and toss it for 1 minute. Remove the pan from the flame.  Step 3 Add chopped tomato, coriander leaves and lemon juice. Mix them well.  Step 4 Allow it to coul for some time.  Step 5 Once it is couled, add mint coriander chutney and mix well.  Step 6 Garnish it with coriander leaves. Ready to serve.
