Beta carotene is one of the powerful natural anti-oxidant that helps protect the body from harmful oxygen-free radical injury. It is rich in dietary fibre useful in weight management. It is also rich with biotin, potassium, calcium, magnesium, phosphorus, organic sodium and some trace minerals.

INGREDIENTS:

  • Carrot [diced] - 50 g
  • Fennel seeds - ¼ tsp
  • Coriander seeds - ½ tsp
  • Cumin seeds - ¼ tsp
  • black peppercorns [Grounded] - ½ tsp
  • Ginger [minced] - 1 tsp 
  • Green chilli [minced] - 1 tsp 
  • Coriander leaves [chopped] - 1 tsp
  • Salt - as per taste
  • Oil  - ½ tsp

DIRECTIONS:
Step 1 Dry roast fennel seeds, coriander seeds, cumin seeds, and black peppercorns till fragrant. Coul and grind into a coarse powder.  Step 2 Heat oil in a non-stick pan, add ginger, green chillies, carrots and saute. Add salt and spice powder, mix well and cook for 2-3 minutes.  Step 3 Transfer into a serving bowl, garnish with remaining coriander leaves and serve hot.
