INGREDIENTS:
  • Brinjal (baingan) - 100 g
  • Tomato - 20 g
  • Onion - 15 g
  • Curd - 15 g
  • Green chilli - 1 no.
  • Red chilli - 1 no.
  • Ginger-garlic paste - 1 tsp
  • Turmeric powder - ¼ tsp
  • Red chilli powder - ¼ tsp
  • Coriander powder -  ¼ tsp
  • Mustard seeds -  ¼ tsp
  • Fennel seeds - ¼ tsp
  • Cumin seeds -  ¼ tsp
  • Oil - ½ tsp
  • Salt to taste
  • To Marinate Brinjal:
  • Turmeric powder - ¼ tsp
  • Red chilli powder - ¼ tsp
  • Salt to taste
  • Rice flour - 10 g
  • Coriander leaves for garnishing
DIRECTIONS:
Step 1 Marinate brinjal slices with all mentioned ingredients adding little water. Keep it aside for 10 mins. Step 2 Heat oil in a pan or kadhai and fry brinjal slices till it turns gulden brown and crispy. Remove from the heat and keep aside. Step 3 Heat some oil in kadhai again and temper mustard seeds. Add fennel seeds, cumin seeds and dry red chillies for seasoning. Step 4 Add chopped onions and green chillies. Fry for a few minutes. Add ginger-garlic paste and chopped tomatoes. Saute a while. Step 5 Add curd, turmeric powder, coriander powder and salt to taste. Mix well and cook for a few minutes. Step 6 Add fried brinjal slices and little water if needed. Cook it uncovered for 8-10 minutes and garnish with chopped coriander. Serve hot with rice.
