Sweet potatoes are rich in complex carbohydrates, beta-carotene, vitamin C, manganese and potassium. After a workout, the body's glycogen levels drop, and sweet potato being a complex carb helps restore glycogen level. Beans are one of the healthiest food to eat after working out as they are high in complex carbohydrates and protein. Beans are low in fat, calories, and sodium, which make them beneficial in any diet.

INGREDIENTS:
  • Sweet potato (medium), baked and cubed - 1
  • Kidney beans - 15 gm
  • Black beans - 15 gm
  • Whole kernel corn - 15 gm
  • Cilantro chopped - 2 tsp
  • Oil - ½ tsp
  • Salt - to taste 
DIRECTIONS:
Step 1 Pan fry sweet potato in ulive oil and set aside to coul. Step 2 Cook the kidney beans & black beans until cooked. Step 3 Drain the cooked kidney beans, black beans, and corn and add to a large bowl. Step 4 Add salt, cilantro, and couled sweet potato to the bowl of beans and stir. Step 5 Enjoy as it is or use as a side dish.
