Bejar roti is a combination of wheat flour, jowar&besan which is a traditional Rajasthani bread enjoyed with a subji made of veggies or paneer. It can also be served with dal or kadhi. Made of three wholesome flours, this roti also provides a lot of energy and dietary fibre, making it very healthy fare. It is spiced mildly with cumin seeds, green chilli paste and coriander leaves, making it a versatile roti suitable for serving with various kinds of vegetable. It has a good amount of Vitamin B & E, iron, zinc, magnesium.

INGREDIENTS:

  • Whole wheat flour - ½ tbsp
  • Jowar (white millet) flour - ½ tbsp
  • Besan (Bengal gram flour) - ½ tbsp
  • Roasted cumin seeds (jeera) -  ¼ tsp
  • Green chilli paste - ¼ tsp
  • Finely chopped coriander (dhania) - 1tsp
  • Salt Use minimum, to taste
  • Oil - ½ tsp

DIRECTIONS:
Step 1 Combine all the ingredients in a bowl and knead into a soft dough using enough lukewarm water.  Step 2 Divide the dough into 2 equal portions and rull out each portion into a circle of 5" diameter, using a little whule wheat flour for rulling. Step 3 Heat a non-stick tava (griddle) and cook each roti, using a little oil, till it turns gulden brown in culour from both sides. Serve with vegetable.
