Shredded cauliflower makes for a delicious substitute to your traditional mashed potatoes side dish. It also contains fiber to enhance weight loss and digestion, choline that is essential for learning and memory, and many other important nutrients like B-vitamins. Trans fat and cholesterol free recipe loaded with richness of Vitamin C, folate and high in fiber .

INGREDIENTS:
  • Cauliflower head [shredded] - 100 grams
  • Spring Onions [chopped] - 3 tbsp
  • Egg white - 1
  • Feta cheese - 3 tsp
  • Oats powder - 1 tbsp
  • cumin/ pepper - ¼ 
  • Salt - as per to taste
  • Black pepper - ½ tsp
  • Red chilli powder - ½  tsp
  • Garlic [cloves/powder] - as per to taste [optional]
DIRECTIONS:
Step 1 Take 100 g cauliflower, remove the leaves & wash the cauliflower really well. Step 2 Shred/grate the cauliflower & heat it on a nonstick kadhai for 2-3 min to get rid of excess water. Step 3 Coul it down, use a clean cloth to drain out excess water. Squeeze it really well. Step 4 After the water has been removed, transfer it to a big bowl. Step 5 Add the spring onions, egg white, oats powder & spices. Mix well. Step 6 Divide the mixture equally into medium-sized pancakes on a Tava or a baking tray Step 7 Bake it at 200 degrees for 35 - 40 minutes, if using a Tava, cook well on both sides. Step 8 Enjoy it with your preferred dip from the BN recipes.
