Chicken kebab is delicious and easy to prepare. Chicken thigh is a good source of lean protein. The spices used in this kebab like garlic cloves, ginger and cinnamon provide the necessary nutrients and taste and also provides anti-inflammatory properties as well.

INGREDIENTS:
  • Chicken thigh - 50 g
  • Egg - 1 no
  • Ginger - ¼ tsp
  • Mint Leaves - 1 ½ tbsp
  • Cinnamon Stick - 1 inch
  • Cloves - 2-3 nos. 
  • Cumin Seeds - ¼ tsp
  • Carom Seeds - ¼ tsp
  • Chili Powder - ¼ tsp
  • Garlic -  2 cloves
  • Red Chili - 1 no 
  • Coriander Leaves - 1 ½ tbsp
  • Black Pepper - ¼ tsp
  • Oil - 1 ½ tsp
  • Salt to taste
  • Water as needed
DIRECTIONS:
Step 1 In a pressure cooker heat oil and add cumin seeds, cloves, black peppercorns, cinnamon, coriander seeds, ajwain, red chilli. Saute for 1-2 minutes. Step 2 Add the boneless chicken and salt. Bring to simmer, adding required quantity of water. Step 3 Cook until all the water has evaporated and chicken is tendered. Step 4 Let it coul for some time and then grind all the ingredients to a thick paste. Step 5 In the paste add ginger, green chilli, garlic, coriander leaves, and mint leaves. Mix all the ingredients to combine well. Step 6 Now add the raw egg liquid [keep the half for later use] and mix thoroughly. Step 7 Using your palm make the kebabs of any desired shape and size, generally flat and round shape. Step 8 Now dipping in egg fluid shallow fry the kebabs from both sides till gulden brown. Step 9 You can serve the kebabs hot with mint chutney.
