This dish combines chicken with spinach and the end result is a tasty, nutritious, and healthy dish. Chicken is high in protein, low in sodium, and is a good source of blood-building vitamin B6, bone-strengthening phosphorus, and cell-protecting selenium. Spinach has an extremely high nutritional value and is rich in antioxidants. It is a good source of vitamins A, B2, C and K, and also contains magnesium, manganese, folate, iron, calcium and potassium.

INGREDIENTS:

  • Chicken - 50g
  • Onions [chopped] - 2 tbsp.
  • Mustard seeds - sprinkle for flavor
  • Ginger paste - 1 tsp
  • Garlic paste - 1 tsp 
  • Turmeric powder - 1 tsp
  • Chili powder - ½ tsp
  • Garam masala powder - 1 tsp
  • Spinach [puree] - 3 tbsp
  • Curd/ Homemade Yogurt - 50g
  • Tomato Puree - 1tbsp
  • Coriander leaves [chopped] - 1 tsp
  • Oil - ½ tsp
  • Water - 1 cup

DIRECTIONS:
Step 1 Heat a large saucepan on high heat.  Step 2 Once it is hot add the mustard seeds and toast them until they sizzle and crackle.  Step 3 Now add the oil and then add the chopped onions and reduce the heat to low. Step 4 Saute the onions gently until they become translucent. Make a paste of the ginger puree, garlic puree, curry powder, turmeric powder, and chili powder, with a little water.  Step 5 Add to saucepan and stir in well and fry for a couple of minutes.  Step 6 Now add chicken pieces and stir in well. Add the pureed spinach. Mix the yogurt, tomato puree, together in a jug with the water and pour into the saucepan and mix in well.  Step 7 Turn up the heat until the sauce begins to simmer and leave to simmer for 10 minutes. Stir occasionally. Finally, sprinkle in the garam masala and stir in well for the final 2 minutes of cooking.  Step 8 Garnish with roughly chopped fresh coriander leaves and serve hot with Rotis.
