Chicken is high in protein, low in sodium and is a good source for blood-building vitamin B6, bone-strengthening phosphorus and cell-protecting selenium.

INGREDIENTS:

  • Chicken shredded -  50 gms
  • Red pepper -  ¼ cut into strips
  • Green pepper - ¼ cut into strips
  • Yellow pepper - 1/4 cut into strips
  • Onion [sliced] -  50g
  • Cherry tomatoes -  2-3
  • Oil -  ½ tsp
  • Salt as per taste
  • Soya sauce -  1 tsp.
  • Cumin seeds -  ¼ tsp
  • Chopped coriander -  1 tsp.
  • Lemon juice - 1 tsp.

DIRECTIONS:
Step 1 Heat the oil in a wok and add the salt and cumin seeds until seeds slightly brown.  Step 2 Add the onions and cook until slightly brown and soft. Add the remaining veggies, shredded chicken, soy sauce and stir-fry on high heat for 2-3 minutes Step 3 Switch off the heat and garnish with fresh lemon juice and coriander.  Step 4 Serve hot.
