Enchilada is a Mexican dish comprising a mini meal rich in proteins from chicken and fiber from the vegetables. Garlic contains useful minerals such as phosphorous, calcium, and iron, as well as trace minerals like iodine, sulfur, and chlorine. It is rich in phytochemical allicin which is anti-inflammatory and antithrombotic and lowers bad cholesterol. Feta cheese is high in protein and low in sodium and fat.

INGREDIENTS:
  • Ground beef - 50 g
  • Onion, diced - 1 small
  • Garlic, Minced - cloves
  • Tomatoes, diced - 1 small
  • Green chilli, chopped - 1 small
  • Tortilla - 1 no. 
  • Shredded feta cheese - 20 g
  • Salt And Pepper - as per to taste 
DIRECTIONS:
Step 1 Preheat oven to 350 F.  Step 2 In a large pan over medium-high heat, brown ground beef. When ground beef is almost done add onions and garlic.  Step 3 Season to your taste using salt and pepper. Cook until onions are soft.  Step 4 Add feta cheese to meat mixture and combine until cheese has melted. Set aside.  Step 5 In a medium saucepan over medium-low heat, add tomatoes and pepper. Season to your taste. Stir until combined.  Step 6 Put a small amount of soup mixture in the bottom of a baking dish. Fill flour tortillas with meat mixture and rull up tight.  Step 7 Place tortillas seam side down in the baking dish. Pour remaining soup mixture over enchiladas and top with cheese.   Step 8 Bake 30-40 minutes or until bubbly.
