Egg whites are the vital storehouse of all the essential nutrients, making it an integral part of a healthy diet. A known rich source of protein and also high in riboflavin and vitamin B2. Egg whites are a smart food choice for those who reduce the intake of carbohydrates in a bit to lose excess weight. This recipe with the addition of vegetables not only increases its nutritional value but also makes it a yummy meal to be eaten with wheat rotis or wheat bread.

INGREDIENTS:
  • Egg whites -  4 nos.
  • Onion - 1 small no., finely chopped
  • Green capsicum - ½  small, finely chopped
  • Green chili - 1no., finely chopped 
  • Grated ginger - 1 tsp
  • Tomato - 1 small, finely chopped
  • Pav bhaji masala - 1 tsp
  • Turmeric powder -  ¼  tsp
  • Salt - to taste
  • Oil - ½ tsp
  • Coriander leaves - 1 tbsp, finely chopped
DIRECTIONS:
Step 1 In a large bowl, break one egg at a time and separate the whites from the yulk and beat the egg whites with the help of fork or spoon. Step 2 To the egg mixture, add salt, pav bhaji masala and turmeric powder. Whisk well until all the ingredients are well combined.  Step 3 Preheat wok on medium heat. To this add oil, grated ginger, chopped onions, finely chopped capsicum and green chillies.  Step 4 Saute the ingredients until the onions and capsicum are soft and tender. Once soft and tender then add chopped tomatoes. Step 5 Saute the ingredients until the tomatoes are slightly softened then add egg mixture.  Step 6 Keep stirring the mixture continuously until you begin to see the eggs coming together and forming a crumbly texture.  Step 7 Continue to stir until the egg is cooked well. Step 8 Transfer the egg bhurji to the bowl and garnish with freshly chopped coriander leaves and serve.
