These enchiladas are a healthier version made with corn and egg whites and feta cheese. Spring Onions are low in calories, carbs and fat. Egg whites are high in protein yet low in calories, fat and cholesterol-free. 

INGREDIENTS:
  • Egg Whites - 3
  • Corn - 2 tbsp
  • Green chilli (chopped)  - 1
  • Spring onions, sliced - ½ cup
  • Garlic (chopped) - 2 tsp 
  • Red Enchilada sauce - 2 tsp
  • Whole wheat tortilla - 1
  • Feta Cheese - ½ tsp
  • Salt - to taste
  • Oil - 1 tsp
DIRECTIONS:
Step 1 In a large mixing bowl, whisk together the egg white, corn, salt, and chilies. Step 2 In a nonstick pan, heat the oil add the white part of green onions and garlic, cook stirring for 3 to 4 minutes until green onions are soft. Step 3 Add egg mixture, stir to mix, reduce heat to medium-low, cover and cook 10 to 15 minutes or until egg is set on top. Step 4 Top with enchilada sauce, cheese and green part of green onions. Cover and cook for 1 minute. Step 5 Uncover and let it rest for 3-5 minutes. Spread the mixture over tortilla & serve
