Brown rice fried rice makes this dish more nutritious, healthy and it is packed with a good amount of protein. Spring onions are rich in vitamins including Vitamin C, vitamin B12 and thiamine. They also contain Vitamin A and Vitamin K. In addition, these are good sources of copper, phosphorous, magnesium, potassium, chromium, manganese and fiber. The chromium content in spring onions has health benefits for diabetics. It controls blood sugar levels and improves glucose tolerance. Fish is rich in omega 3 and 6 which is good for skin, good for heart, helps to lower blood pressure and bones.

INGREDIENTS:
  • Brown rice raw - 30 g
  • Fish pieces - 50 g
  • Ginger (chopped) - ½ tsp
  • Garlic (chopped) - ½ tsp
  • Spring Onion - 1 tbsp
  • Oil - ½ tsp
  • Salt to taste 
  • White pepper - a pinch 
  • Soya sauce - ½ tsp
  • Vinegar - ½ tsp
  • Water - 1 cup
DIRECTIONS:
Step 1 Wash and soak the rice in water for at least 15 minutes.  Step 2 Add rice and 2 cups of water and bring it to boil, lower the heat and cover the vessel adjust the quantity of water to make sure that the rice is well cooked.  Step 3 Heat oil in a wok, add spring onions and garlic and stir-fry for a minute. Step 4 Add fish pieces and stir-fry for 3-4 minutes.  Step 5 Add cooked rice and salt and cook for a minute, stirring and tossing continuously. Add soy sauce, white pepper powder and mix thoroughly. Step 6 Add vinegar, mix well and serve hot.
