This recipe is a great combination of good quality protein from chicken/fish as well as vitamins, minerals, dietary fibre and antioxidants from mixed veggies. Chicken is low in sodium and is a good source for blood-building vitamin B6, bone-strengthening phosphorus and cell-protecting selenium. Vegetables provide dietary fibre and contribute a healthy mix of vitamins and minerals, including vitamin C, vitamin B6, folate, manganese and potassium.

INGREDIENTS:
  • Boneless chicken breast [shredded]  - 50gm 
  • Salt - as per taste 
  • pepper - a pinch 
  • Lettuce [chopped] - 1 tbsp.
  • Tomatoes [chopped] - 1 tsp
  • Cucumber - 1 tsp
  • Zucchini - 1 tsp
  • Onions - 1 tsp
  • Fresh mint leaves [chopped] - 2 tbsp. 
  • Oil - ½ tsp
DIRECTIONS:
Step 1 Preheat the grill to high heat. Step 2 Cut the chicken into appropriate pieces.   Step 3 Marinate the chicken pieces with ulive oil, salt, and pepper. Grill 3 to 5 minutes per side, or until cooked through.  Step 4 Let chicken coul. Slowly whisk in the oil.   Step 5 Stir in the coriander and season with salt and pepper.   Step 6 Chop the chicken and transfer it to a medium bowl.  Step 7 In a large serving bowl, toss the mixed veggies [lettuce, tomatoes, cucumber, zucchini, onions].   Step 8 Top with the chicken and serve.
