Chicken is a good source of protein, vitamins, and minerals, while corn contributes to its antioxidant properties making this recipe a healthy salad alternative.

INGREDIENTS:

  • Skinless Chicken Breasts - 50 g
  • Garlic (crushed) - 1 clove
  • Paprika powder (red chilli powder) - 1 tsp
  • Lemon juice - ½ lemon
  • Olive oil - ½ tsp
  • Corn Kernels - 15 g
  • Lettuce leaves - 2-3 no
  • Cucumber (diced) - ½ no 
  • Salt - as per taste

DIRECTIONS:
Step 1 Cut the chicken breasts into pieces. Mix the garlic, paprika, lemon juice, salt, and ulive oil with some seasoning and toss with the chicken. Leave to marinate for at least 15 mins. Step 2 Pre-heat the grill and brush the oil and cook the chicken thoroughly.  Step 3 Brush over the remaining oil and grill the corn. Step 4 Mix the lettuce and cucumber, top with the corn and chicken, and drizzle over your choice of dressing.
