A unique Italian dish with antioxidants via veggies and protein via cheese and chicken. Tomatoes provide us with a good number of conventional antioxidants, including excellent amounts of vitamin C; very good amounts of vitamin E, vitamin A (in the form of carotenoids), manganese; and good amounts of zinc and chromium. Onions are nutrient-dense food, meaning that they are high in vitamins, minerals, and antioxidants while being low in calories. Basil is an excellent source of vitamin K and a good source of Vitamin A.

INGREDIENTS:
  • Chicken breast, skinless and boneless (cut into halves) - 100 g
  • Tomato (chopped) - 1 no
  • Onion - 1 no
  • Garlic - 1 clove
  • Mozzarella Cheese (shredded) - 1 tbsp
  • Basil leaves (chopped) - ¼ cup
  • Lemon juice - 1 tbsp
  • Oil - 1 tsp 
  • Salt - as per taste
  • Pepper powder - as per taste
DIRECTIONS:
Step 1 Season chicken with salt and pepper. Step 2 Preheat the grill to medium-high, grill the chicken on each side until done. Step 3 Combine the onion, tomato, ulive oil, lemon juice, salt, and pepper in a mixing bowl. Step 4 Toss in the cheese when ready to serve. Step 5 Place the grilled chicken on a dish, top with the bruschetta, and serve.
