Cauliflower is a great vegetable to include in the diet, naturally high in fiber and B-vitamins. It provides antioxidants and phytonutrients that pose anti-cancer properties. 

INGREDIENTS:

  • Cauliflower[medium] [trimmed and cut into small florets] - 1 [6-7 cups]
  • Extra virgin olive oil - 1 tsp
  • Fine sea salt and ground black pepper, to taste
 

DIRECTIONS:
Step 1 Bring a large pot of salted water to a boil. Step 2 Add cauliflower and cook until very tender, about 10 minutes.  Step 3 Reserve ¼ cup of the cooking liquid and then drain well and transfer cauliflower to a food processor.  Step 4 Add oil and reserved water, 1 tbsp at a time, and puree until smooth. [Or, mash cauliflower with a potato masher]. Season with salt and pepper and serve.
