Barley is a complete healthy package of vitamins, minerals and antioxidants. Barley claim's to be an excellent source of molybdenum, manganese, dietary fibre, and selenium, and a good source of copper, vitamin B1, chromium, phosphorus, magnesium, and niacin. Also, olives are nutritious and rich in mineral content such as sodium, potassium, magnesium, iron, phosphorus and iodine. 


  • Barley [raw] - 2 tbsp 
  • Vegetable broth - 1 cup
  • Olives [chopped] - ¼ cup
  • Tomato [diced] - 2 tbsp 
  • Cucumber [diced] - 2 tbsp 
  • Parsley [chopped] - 1 tsp
  • Oil - ½ tsp

Step 1 Bring broth to a boil in a medium saucepan.  Step 2 Add the barley, oil, and salt. Bring back to a boil, adjust heat to maintain a gentle simmer, cover and cook until tender, about 15 minutes. Remove from the heat and let stand, covered, for 5 minutes more. Drain excess liquid, if needed, and coul.  Step 3 Meanwhile, whisk the lemon juice, salt, and pepper in a large serving bowl.  Step 4 Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.  Step 5 Add the barley and the remaining salad ingredients and toss to coat with the dressing. Serve.
