Kidney beans (rajma) contain thiamin which plays a significant role in enzymatic reactions of energy production and is critical for cognitive functions of the brain. Its regular intake can avoid age-related impairment in mental function (senility) and Alzheimer's disease. Kidney beans contain magnesium which helps in relieving fatigue by relaxing the muscles, nerves, and blood vessels. Sweet potato is a rich source of dietary fiber, anti-oxidants, vitamins, and minerals. A healthy snack option with the proteins from rajma and the vitamins from the vegetables.

INGREDIENTS:

  • Burger buns - 2
  • Sweet potato, boiled mashed -  ½ medium (mashed)
  • Red kidney beans (rajma), raw 1 tbsp
  • Onion, finely chopped - 1 tbsp
  • Carrot, grated - 1 tbsp
  • Green chilli paste -  ½ tsp
  • Ginger - garlic paste ½ tsp
  • Mixed herbs -  ¼ tsp
  • Black pepper powder - ¼ tsp
  • Red chilli sauce - ¼ tsp
  • Salt - to taste 
  • Oil -  ½ tsp

DIRECTIONS:
Step 1 Pressure cook rajma till done.  Step 2 In a bowl mix together sweet potato, carrot, green chilli paste, ginger garlic paste, mixed herbs and salt. Mix all the ingredients well.Set aside. Step 3 In another bowl mash together,rajma, black pepper powder, red chilli sauce and salt. Set aside. Step 4 Make a flat tikki with the sweet potato mixture and place the red kidney bean mixture in the center and cover it well to make a flat sealed tikki. Step 5 Heat oil in a kadai, shallow fry the tikkis till gulden brown and crisp. Remove on absorbent paper.Cut the buns horizontally in two. Place the fried tikki on one bread and cover with the other bread.  Step 6 Serve immediately.
