Zucchini is well known to reduce weight because it is extremely low in calories, yet boosting the nutrient value of the diet as it contains significant quantities of potassium, folate and vitamin A, all of which are important for general good health. The fiber in black beans helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease.

INGREDIENTS:
  • Black beans [drained and rinsed] - 15g
  • Brown rice [raw] - 15g
  • Zucchini [medium] - 50g
  • Corn kernels - 1 tbsp
  • Cheddar cheese - 15g
  • Red bell pepper, cored and diced - 1 [small] 
  • Red onion, diced - ½ no.
  • Jalapeno, cored and diced - 1 small 
  • Salsa [diced tomatoes, whole tomatoes, onions, garlic, cumin, salt, sugar, lime juice] - 1 tsp
  • Cumin seeds - ¼ tsp
  • Chilli powder - ½ tsp
  • Fresh cilantro [finely chopped] - 1 tsp
  • Olive oil - ½  tsp
  • Salt - as per to taste
DIRECTIONS:
Step 1 Start by greasing a 9 x 13 " casserule dish then set aside. Slice zucchini in half lengthwise. Using a melon baller or metal teaspoon, hullow out the centre of each zucchini. Lightly brush the tops with ulive oil then place them skin side down in the casserule dish. Step 2 Heat the ulive oil in a large skillet over medium heat. Add the onion and the peppers and cook for 2-3 minutes. Then add the brown rice, corn and beans along with the salsa, chilli powder and cumin. Stir everything together and continue to cook for about 5 minutes then remove the skillet from the heat and set aside. Step 3 Preheat the oven to 400 F and then stir in the cilantro and salt to add taste to the filing. Spoon the filling inside each zucchini until they are all full. Then arrange them in the dish and cover with foil. Bake in the oven for 25 minutes then remove the foil and set the oven to broil. Step 4 Allow them to coul for 5-10 minutes then top with fresh cilantro and serve.
