Mutton Pulao is a flavorsome dish made of Brown rice and fresh meat with a mix of aromatic and healthy spices as well as condiments. Some of the important spices used are Fennel seeds which are good for digestion, Bay leaf which is a powerful combination of potassium, antioxidants, and iron. Peppercorns which are garstro protective and ginger- helps with indigestion and so much more! . Brown rice has dietary fiber and minerals that are good for health. Relish this wonderful all-time favorite dish with friends and family.

INGREDIENTS:
  • Mutton - 50 g
  • Brown Rice - 30 g
  • Salt -  to taste 
  • Fennel/Sauf (powder) - 1 tsp 
  • Dry ginger powder - ½ tsp 
  • Cloves - 2 nos
  • Black peppercorns - 2 nos
  • Bay leaf - 1 no
  • Oil - minimal
  • Cumin seeds - ½ tsp 
  • Asafoetida - a pinch 
  • Green chilli - 1 no
  • Curd - ½ cup 
DIRECTIONS:
Step 1 Soak rice for half an hour. Drain and set aside. Step 2 Mix mutton with salt, fennel powder, dry ginger powder, cloves, black peppercorns, and bay leaves. Leave to marinate for about half an hour.  Step 3 Heat oil in a pan. Add cumin seeds and asafoetida, sauté for a few seconds. Add the marinated mutton and sauté for two to three minutes. Step 4 Add salt and whule green chillies. Add water (1/2 cup initially and then as required) and bring to a boil. Cover and simmer for ten minutes, stirring occasionally. Step 5 In another vessel whisk curd till smooth and add it to the mutton little by little stirring all the time so that the gravy is uniform. Add drained rice and mix well. Step 6 Cook on high heat. When the mixture comes to a boil, reduce heat and cook till both mutton and rice are done.
