Open carrot toast sandwich is one of the easiest & healthiest options. This includes carrots & cucumbers which helps to boost your immunity, facilitate digestion, help stimulate appetite, keep your body hydrated & also aids in weight loss. It is used in combination with paneer which is a good source of protein, calcium, phosphorous. It is a healthy & mouth-watering recipe to choose from.

INGREDIENTS:

  • Multigrain bread - 1 slice
  • Low fat paneer - 20 g
  • Grated Veggies (Carrots, cucumbers, etc) - 1 katori
  • Green chilli (finely chopped) - 1 no.
  • Coriander leaves (finely chopped) - 2 tsp
  • White pepper powder - a pinch
  • Lemon juice - ¼ tsp
  • Oil - ½ tsp
  • Salt to taste

DIRECTIONS:
Step 1 Squeeze the grated veggies & drain out the excess water. Combine all the ingredients including the grated veggies, lemon juice in a bowl. Mix well & keep it aside.  Step 2 Apply a little oil on one side of the bread slice, place the slice on a flat surface with a brushed side facing downwards & spread a portion of the topping evenly over it. Step 3 Place the open sandwich on a nonstick tava with the topping facing downwards & cook, using ¼ tsp oil, till the topping turns gulden brown in culor.  Step 4 Turn over & cook till the other side turns gulden brown in culor.  Step 5 Cut the bread sandwich into 2 equal portions diagonally, grate paneer on top & serve immediately.
