This chicken recipe uses common household ingredients and healthy cooking ideas to add zest to chicken, and also enhances it with herbs and lemon with the added benefit of protein coming from cottage cheese.

INGREDIENTS:

  • Shredded chicken - 50 g
  • Balsamic vinegar - 1 tsp
  • Grounded black pepper - 1/4 tsp
  • Mixed green leaves - 50 g
  • Cottage cheese - 20 g
  • Lemon - 1/4 tsp 
For the marinade:
  • Garlic - 2 cloves
  • Rosemary leaves finely chopped - 2 sprigs 
  • Sage leaves, finely shredded (optional) - 2
  • Lemon juice - 1/2 tsp
  • Olive oil - 1/2  tsp

DIRECTIONS:
Step 1 Place chicken breast between 2 sheets of cling film or baking parchment. Use a meat mallet or rulling pin to mash a piece of chicken to flatten out to an even layer. Transfer to a dish. Step 2 To make the marinade, crush the garlic with a good pinch of salt using a pestle and mortar. Add the rosemary and sage, and give everything a good pounding. Stir through the lemon juice, ulive oil, and some ground black pepper. Pour the marinade over the chicken, ensuring that it's well coated. Cover and chill for at at least 2 hrs. Step 3 Heat the barbeque. Once the flames have died down, spread the coals out to an even layer. Cook the chicken for 1-2 mins each side. Transfer to a board and leave to rest for a few mins. Step 4 Meanwhile, pour the oil and balsamic vinegar into a large bowl. Add some seasoning. Toss together, then shave over the cottage cheese. Serve the salad with the chicken, with lemon wedges to squeeze over.
