Spinach [palak] being is high in nutrients like folate, iron magnesium when combined with tomato being the major dietary source of antioxidant lycopene which has been linked to many health benefits including reduced risk of heart disease and cancer. Also, tomato being high in vitamin C will help in better absorption of iron which we get from spinach.

INGREDIENTS:
  • Spinach [chopped] - 100 g
  • Tomato [chopped] - 1 tbsp 
  • Garlic [Minced] - 2 clove
  • Garam masala powder - ½ tsp
  • Coriander powder - ¼  tsp
  • Red chilly powder - ½ tsp
  • Cumin seeds - ½ tsp
  • Salt - as per taste
  • Oil - 1 tsp
DIRECTIONS:
Step 1 Chopped the spinach and tomato. Step 2 Heat the oil in a pan and add cumin seeds. When they splutter add minced garlic and saute for a few seconds till the raw smell goes and it turns light brown. Step 3 Add chopped tomato and saute. Let it cook for 4-5 minutes. Then add all the powdered spices. Step 4 Add chopped spinach to it and let it cook for some time. Do not cover the pan. Step 5 Add salt just before you switch off the flame. Step 6 Serve warm.
