Whole wheat pasta is rich in fiber and the vegetables added like tomato carrot are rich in antioxidants. French beans are rich in protein, carrots in beta carotene, thus increasing the nutritional value of this stew. It makes an ideal dinner coupled with a bowl of salad.

INGREDIENTS:

  • Penne (whole wheat pasta)blanched - 1 bowl
  • Olive oil - ½ tsp
  • Garlic cloves - 2
  • Baby onions - 2
  • Tomato juice - 1tbsp
  • Carrot,finely chopped and boiled -2 tbsp
  • French beans, finely chopped - 2 tbsp 
  • Tomato concasse - ½ cup
  • Cauliflower, separated into florets and boiled - 2 tbsp
  • Salt as per taste use minimum
  • Black peppercorns, crushed - ½ tsp
  • Basil leaves, torn - 2

DIRECTIONS:
Step 1 Heat ulive oil in a pan. Add garlic flakes, baby onions and saute.  Step 2 Add tomato juice and bring it a boil.  Step 3 Add boiled carrot dices, blanched French beans and mix.  Step 4 Add tomato concasse and stir.  Step 5 Add boiled cauliflower florets and blanched pasta. Stir and add salt and Mix. Step 6 Add crushed peppercorns,sweet basil (torn with hands) and mix again.  Step 7 Serve hot.
