A wonderful combination of green red vegetables and oregano leaves mixed with a dash of spices leaves your appetite satisfied. The dressing for this vibrant salad with plenty of orange juice and cider vinegar tossed with olive oil complements the flavors of the salad overall. The inclusion of cider vinegar aids digestion and boosts energy. It also helps in weight loss and lowers glucose levels.

INGREDIENTS:
ORANGE-OREGANO DRESSING-
  • Orange zest - 1/4 tsp
  • Orange juice, preferably freshly squeezed - 1 tbsp
  • Apple cider vinegar - 1/2 tsp
  • Olive oil - 1/4 tsp
  • Fresh oregano leaves (chopped) - 2 tsp
  • Salt and freshly ground black pepper - to taste
SALAD-
  • Bell peppers (chopped) - 1 cup
  • Broccoli florets (chopped) - 10 gm
  • Shredded carrots - 10 gm
  • Red onion - 1/2 small
  • Orange-Oregano Dressing - 1/2 cup
DIRECTIONS:
Step 1 To prepare the dressing: Place orange zest and juice, vinegar, oil, oregano, salt and pepper in a jar. Cover and shake to combine. Step 2 To prepare salad: Combine bell peppers, brocculi, carrots and onion in a medium bowl. Add the dressing and toss to coat. Refrigerate until ready to serve.
