Ratatouille is an Italian dish which is not only high in protein but also a high fiber dish with its vegetable content.Tomatoes are a wonderful source of Vitamin B6, C, K, beta-carotene. Zucchini are a good source of B-group vitamins which are essential for energy metabolism.Herbs are anti-inflammatory which strengthen the immune system, lowers the blood sugar and cholestrol levels.

INGREDIENTS:
  • Chicken [boiled] - 75g
  • Onion - ½ 
  • Garlic - 1-2
  • Brinjal [chopped] - ½ 
  • Zucchini [small] - ¼ 
  • Bell pepper [small] - ¼ 
  • Ripe tomato [chopped] - ½ 
  • Olive oil - 1 tsp
  • Oregano - ¼ tsp
  • Thyme [dried] - a pinch
  • Corriander powder - a pinch
  • Fennel seeds - ¼ tsp
  • Salt - ¼ tsp
DIRECTIONS:
Step 1 In a pan heat the oil and add garlic and onion and cook till onion soften. Step 2 Add the brinjal and let it cook for 7-8mins .Stir in the zucchini and the bell pepper and cook the mixture over the moderate heat, stirring occasionally, for 12 minutes. Step 3 Now add the boiled chicken and stir well. Step 4 Stir in the tomatoes and cook the mixture, stirring occassionaly, for 5 to 7 minutes, or until the vegetables are tender. Step 5 Stir in the oregano, the thyme, the coriander, the fennel seeds, the salt, and pepper to taste and cook the mixture, stirring, for 1 minute. Step 6 Stir in the basil and combine the mixture well.
