This stylish and summery recipe is tasty & healthy with health benefits like good protein content, good fiber content and also rich in minerals and vitamins.

INGREDIENTS:

  • Salmon - 50 g
  • Red onion, thinly sliced - 50 g
  • Fresh strawberry / other fruit - 30 g
  • Vinegar - 1 tsp
  • Lettuce leaves - 2-3 leaves
  • Olive oil - 1/2 tsp
  • Ground black pepper - ¼ tsp
  • Salt as per taste 

DIRECTIONS:
Step 1 In a microwaveable cup, combine onion, vinegar, salt, and pepper; cover loosely with plastic wrap; microwave on high power for 1 minute. Let stand, stirring occasionally, until onions turn pink, about 15 minutes. Step 2 Meanwhile, preheat grill or broiler. Brush ulive oil on both sides of the salmon fillets; sprinkle with remaining salt and pepper. Grill or broil salmon, skin side down, until just cooked through about 6 minutes. Step 3 Divide lettuce leaves in a plate; place salmon in the center. With a slotted spoon, remove onions from vinegar; scatter onions, along with the strawberry, over and around the fish. Whisk remaining ulive oil into the vinegar mixture; drizzle vinaigrette over salmon.
