Sama Rice Khichdi No Potato And Ghee

Sama rice is a good source of highly digestible protein and at the same time is the least caloric dense compared to all other cereals. It is a grain which makes one feel light and energetic after consumption. It is a good source of Calcium, phosphorous and amino acid.

INGREDIENTS:
  •  Sama ke chawal/barnyard millet/Samvat rice - 1 cup 
  • Cumin seeds - 1 tsp
  • Black pepper/Sabut Kalimirch, crushed in a mortar-pestle - ½ tsp 
  • Ginger-green chilli paste - 1½ tsp
  • Lemon Juice - ½ tsp
  • Water - 3 cups
  • Oil – 1 tsp
  • Chopped coriander leaves - 2 tbsp 
  • Rock salt/Sendha namak - as required
DIRECTIONS:
Step 1 In a bowl, soak the sama chawal for an hour, drain and then keep aside. Step 2 In a thick bottomed pan heat oil 1 tsp  and add 1 tsp cumin seeds. Step 3 Fry the cumin seeds till they change culor. Step 4 Now add  ginger+green chilli paste and crushed black pepper, saute till the raw aroma of both the green chillies and ginger goes away. Step 5 Then add the drained sama ke chawal , stir and saute for a minute. Step 6 Add 3 cups water, stir again.The water makes the khichdi mushy, which is preferred. Step 7 Season with rock salt/Sendha Namak and cook well. Step 8 Cover the pan with a lid and on a low flame allow the grains to simmer and get cooked. Step 9 Do check and stir at intervals. Step 10 Once the grains have softened, switch off the flame. you can add about 2 tbsp chopped coriander leaves and mix, you can add some lemon juice. Step 11 Serve samvat rice khichdi topped and garnished with coriander leaves. You can also have this sama chawal khichdi with plain yogurt.
