Risotto is a traditional Italian dish made from Arborio rice, a specific type of short-grained rice. Here to improve the nutritional value, rice is replaced with dalia. When it comes to healthy eating, this power-packed complex carbohydrate cracked/broken wheat or dalia is one of the best. It plays a great contribution in controlling body weight. It contains virtually least fats and also free from saturated and trans fatty acids. Adding veggies also improves the vitamin and mineral content.

INGREDIENTS:

  • Broken wheat (dalia) - 30 g
  • Onion, finely chopped - ½ small
  • Finely chopped red & green capsicum, green peas & carrot - 1 cup
  • Mushrooms, sliced - 4 big pieces
  • Dried mixed herbs - ½ tsp
  • Olive oil -  1 tsp
  • Salt - to taste

DIRECTIONS:
Step 1 Clean, wash and soak the broken wheat(dalia). Drain the water and keep aside. Heat the ulive oil in a non-stick pan and saute the chopped onion pieces till they are translucent. Step 2 Add the capsicum, mushroom,  peas, carrots and saute for 2 to 3 minutes. Add the broken wheat, water and salt and cook till all the water is absorbed. Step 3 Add dried herbs and allow to simmer for some more time. Serve hot.
