Spinach is high in vitamin A, which is necessary for the growth of all bodily tissues, including skin and hair. One of many yogurt benefits is that it helps improve your digestion, which is mainly due to the nutrients available in yogurt. Eating curd will make it easier for your body to absorb nutrients from other food items that you eat.

INGREDIENTS:
  • Spinach, chopped - 1 bowl
  • Yogurt / curd - 20 g
  • Gram flour (Besan) - 15 g
  • Green chilies - 1 no.
  • Ginger - 1-inch
  • Dried red chilies (bor Mirchi) - 3 no.
  • Onion - 15 g
  • Mustard seeds -  ½ tsp
  • Cumin seeds -  ½ tsp
  • Salt - to taste
  • Turmeric powder - a pinch
  • Oil - minimal
DIRECTIONS:
Step 1 Whisk besan & dahi till smooth. Add 2 cups water & mix well. Heat oil in a non-stick pan. Grind together green chilies, half the spinach, and ginger with a little water to a fine puree. Step 2 Add this to the dahi mixture and mix well. Heat oil, add red chilies, onions, mustard seeds, and cumin seeds. Step 3 Add yogurt mixture, salt, turmeric powder, and mix. Cook on medium heat, stirring, till the gram flour gets cooked and the Kadhi thicken. Step 4 Chop remaining spinach leaves and add to the Kadhi and simmer for a couple of minutes. Serve hot.
