Khichidi is always termed as a comfort food, adding spinach is cherry on cake, Health benefits of spinach are not unknown, Spinach is low in fat and even low in cholesterol, spinach is high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. So, therefore, it is a very nutritious, filling and a comforting meal.

INGREDIENTS:

  • Rice - 20 g
  • Yellow lentils - 10 g
  • Spinach [finely chopped] - ½ cup 
  • Oil - 1/2 tsp
  • Cumin seeds - ½ tsp
  • Turmeric - a pinch
  • Water - 2 cups
  • Salt (As per taste)

DIRECTIONS:
Step 1 Clean and wash dal and rice well. Step 2 Soak dal and rice in water for half an hour. Step 3 Pressure cook dal and rice with 2 cups water and turmeric till well-cooked (4-5 whistles). Step 4 Heat the oil in a pan. Put the cumin seeds till it crackles. Now add chopped or pureed spinach and saute for some time in an open pan. Step 5 When spinach is cooked, add the cooked dal and rice and mix well. Step 6 Add salt (As per taste) Step 7 Cook for few more minutes to get the consistency you like. Step 8 Add some more water if needed. Step 9 Mash khichdi lightly with a spoon and serve with some curds if you want.
