A light lemon grass flavored Thai style soup packed with a wealth of all Vitamin B. The incorporation of this soup in the daily diet has benefits of B-complex vitamins which are required for the metabolism of other major nutrients like carbohydrates, proteins, and fats. Since the soup is loaded with varied vegetables, spices and herbs there is a feeling of fullness hence, leading to weight loss as well, contains plant fats that lower cholesterol levels.

INGREDIENTS:
  • Green peas - 1/2 katori
  • Straw Mushrooms (halved) - 1/2 katori
  • Cabbage (chopped) - 1 katori 
  • Lemon grass (sliced) - 1 tbsp 
  • Bamboo shoots - 2-3 stalk
  • Kaffir lime leaves - 1 tsp 
  • Fresh red chillies (sliced) - 2-3 nos.
  • Fresh coriander leaves (finely chopped) - 1 tbsp 
  • Red curry paste - 1 tsp
  • Lemon juice - 1 tsp
  • Salt - as per taste 
  • Oil - 1/2 tsp
DIRECTIONS:
Step 1 Heat oil in a pan; add green peas, straw mushrooms, lemon grass and saute for 1 minute.  Step 2 Add Kaffir lime leaves, red curry paste and stir well. Add four cups of water and mix again for 1-2 minutes.  Step 3 Once the water starts boiling add cabbage, bamboo shoots, red chilies and salt. Cook for another 2-3 minutes.  Step 4 Remove from heat and add lemon juice.  Step 5 Pour it in a bowl, garnish with coriander, serve hot and Enjoy!.
