Tofu Kebabs With Cilantro Sauce

This is a healthy way of eating kebabs, as it is with cilantro sauce. Cilantro is rich in micronutrients and nutritional elements. It contains dietary fiber, vitamins and minerals like calcium, magnesium, sodium, and potassium. Lemon is a good source of vitamin C. Vitamin C is a natural antioxidant that reduces inflammation.

  • Tofu - 20gm
  • Fresh cilantro leaves - 1 cup
  • Summer squash, 2-3 pc small
  • Jalapeno (seeded) - 1no
  • Fresh ginger - 1 tsp.
  • Fresh lime juice - 1 tsp.
  • Green  onions(scallions) - 1 tbsp.
  • Oil - 1/2 tsp
  • Coarse salt and ground pepper to taste
Step 1 Heat grill to medium. In a food processor, combine cilantro, jalapeno, ginger, lime juice, and scallion greens. Blend until smooth; season with salt and pepper. Combine tofu, scallion whites; season with salt and pepper. Thread tofu and scallion whites skewers, and then thread squash onto skewers. Step 2 Clean and lightly oil hot grates. Grill tofu kebabs until scallions are soft, 2-3 minutes, turning occasionally; brush with cup cilantro sauce and grill 30 seconds more. Serve kebabs with remaining cilantro sauce.
