The nutrient density of eggs makes them a valuable contributor to a nutritious diet. Protein obtained from eggs is of the highest quality protein. High source of flavonoid antioxidants. It has besan too which makes it a high protein recipe.

INGREDIENTS:
  • Boiled eggs - 3
  • Besan - ½ cup
  • Bread crumbs - 1/3rd cup
  • Baking powder - ½ tsp 
  • Water - ¼ cup
  • Ginger garlic paste -  ½ tsp
  • Chilli Powder - ¼ tsp
  • Pepper powder - ½ tsp 
  • Chopped coriander leaves - 1 tbsp
  • Olive oil for shallow fry
  • Salt - to taste
  • For stuffing:
  • Chopped red & green capsicum - ½ cup 
  • Tomato, chopped - 1
  • Onion,  chopped - 1
  • Pepper powder - as per taste
  • Salt - as per taste
DIRECTIONS:
Step 1 In a bowl mix well besan, ½ cup bread crumbs, salt, and baking powder. Add to it ginger garlic paste, chilli powder, pepper powder, coriander leaves, and 2 tsp Olive oil. Cover the mixture and keep in the fridge for 15-20 min. Step 2 Remove the mixture from the fridge. Apply little oil on palm; Take a small portion of the mixture and flatten it. Step 3 Place boiled egg in the center and cover the egg. In a separate bowl mix 1 tsp Maida in water. Step 4 Now rull it in remaining 2/3rd cup bread crumbs. Shallow fry in oil and remove on a tissue paper. Step 5 Cut the rulled eggs into half. Remove the yulk. Stuff the Egg whites with Red & Green capsicum, tomato, and onion. Sprinkle the top with pepper powder and salt.
