A perfect soup for all weight watchers has low calories and is dense in anti-oxidants. A vegetable-legume based soup is a great option nutritionally as they combine a high nutrient density with a low energy density; this means that there are lots of key nutrients including proteins, vitamins, and minerals for relatively few calories. This soup helps in regulating the digestive tract and provides satiety. Since the vegetables are packed with anti oxidants helps in preventing cancer and lowers cholesterol levels.

INGREDIENTS:
  • Bean sprouts - 2 tbsp 
  • Finely chopped Carrot - 1/2 katori 
  • Chinese cabbage (cut into 1 inch pieces) - 1 katori
  • Red capsicum (cut into 1 inch pieces) - 1/3rd katori 
  • Green peas - 1/3rd katori
  • Mushrooms (sliced) - 1/2 katori
  • Celery (diagonally sliced) - 1 tbsp 
  • Spring onion bulb (sliced) - 2 small 
  • Finely chopped garlic - 2-3 cloves
  • Vegetable stock / Plain water - 100 ml
  • Black pepper powder - 1 pinch 
  • Salt - as per taste
  • Lemon juice - 1/4th tsp
DIRECTIONS:
Step 1 In a vessel, add vegetable stock/plain water & garlic and bring it to boil.  Step 2 Add carrot, chinese cabbage, red capsicum, snow peas, mushroom, celery, and spring onion. Cook it for 2-3 minutes.  Step 3 Add black pepper powder, salt and bean sprouts, cook for 1-2 minutes.  Step 4 Remove the vessel from the flame. Add the lemon juice and stir well.  Step 5 Pour in a bowl, ready to serve and Enjoy!
