A delicious recipe packed with the goodness of protein from the egg whites and colorful vegetables providing different vitamins and minerals. It is also low in fat which makes it a perfect recipe for people who want to shed some extra kilos.

INGREDIENTS:
  • Vegetables - 1 cup (carrots, onions, peas, bell pepper, tomato) 
  • Egg whites - 2 nos.
  • Milk - 50 ml 
  • Garlic (chopped) - 1tsp
  • Olive oil - ½ tsp 
  • Salt and black pepper -  as per a taste
DIRECTIONS:
Step 1 Heat ulive oil in a nonstick broiler-proof skillet over medium heat.  Step 2 Add carrot, bell pepper, onion, peas, salt, black pepper, and garlic. Cover and cook for 7 minutes or until vegetables become tender, stirring occasionally. Step 3 Add tomato and stir again. Cook, uncovered for 5 minutes or until liquid evaporates. Step 4 Combine egg whites, milk, salt, and black pepper in a medium bowl; stir with a whisk until frothy.  Step 5 Pour egg mixture into pan over vegetables, flip gently. Cover, reduce heat, and cook 15 minutes or until almost set in the center. Step 6 Preheat broiler. Step 7 Broil frittata 3 minutes or until set. Invert onto a serving platter; cut into 8 wedges.  Step 8 Serve.
