This delicious vegetable minestrone soup is not just packed with nutrients and antioxidants obtained from the vegetables, but also it is the whole wheat pasta that matters. Opting for whole wheat ensures the most nutritional benefits, including the bran and the germ's vitamin E, major B vitamins, antioxidants, appetite-squashing fiber, protein, and healthy fats. 


  • Vegetable broth/ plain water - 1 cup
  • Tomatoes, diced - 1
  • Fresh basil, chopped - 1 tbsp
  • Oregano - ½ tsp
  • Carrots, chopped - 1
  • Celery, chopped - 1-2 stalks
  • Onion, chopped - ½
  • Zucchini, chopped - 1
  • Green beans, chopped - 2 tbsp
  • Garlic, minced - 1 clove
  • Bay leaf - 1no.
  • Salt and pepper - to taste
  • Whole wheat pasta - ½ cup
  • Oil - ½ tsp

Step 1 In a large pot, combine all the ingredients except the pasta. Simmer over low heat until vegetables are tender. Step 2 Add the pasta and bring to a slow simmer. Cook for another few minutes, or until pasta is done cooking.  Step 3 Remove bay leaf before serving. Enjoy!

Kaddu Or Pumpkin Dal

Toor dal is high in folic acid, protein and also dietary fiber, low-cholesterol alternative, especially for vegetarians. Not only do they help improving bowel movement, but also reduce the risk of chronic diseases. Chana dal is high in fiber and helps to lower cholesterol. It also has a very low glycemic index, which is important for those with diabetes. It is also a helpful source of zinc, folate, calcium, and protein.

Sprouts And Tofu Soup

This is an amazing combination of ingredients. Both tofu and sprouts add to the health quotient, while garlic and white pepper boost the flavour of the soup.  The sauteed tofu cubes add body and volume to the dish, and the moong bean sprouts add lightness and sweetness and make the whole recipe refreshing. Bean sprouts being dense in fibre and anti-oxidants when combined with tofu which is rich in soy proteins, low in sodium and cholesterol-free makes the dish nutritious. The addition of vegetable stock releases varied flavours to the soup.
